Short Description
A rich and creamy soup made with tender broccoli florets simmered in heavy cream and water, blended until smooth, and finished with cheddar cheese for extra flavour. Seasoned with chicken base, salt, and white pepper, this comforting classic is thickened to perfection and served warm.

Ingredients
4 cups broccoli florets
1 qt heavy cream
2 cups water
2 tablespoons chicken base
1 pinch salt and white pepper
1 cup cheddar cheese, shredded

Preparation
In a stockpot, combine the cream and water, bring to a gentle boil, and add the broccoli florets. Simmer on low heat until the broccoli is tender, then incorporate the chicken base and stir until it dissolves.
Increase to a medium boil and gradually add some of the slurry, stirring continuously. Thicken the soup until it coats the back of a spoon. Once thickened, use an immersion blender to blend until smooth. Return to heat and check the thickness; adjust if needed. Season with salt and pepper, add the cheese, and stir until melted.
