Pork Chops with Beer and Bacon Gravy

Short Description

Oven-roasted pork loin served with a rich bacon-onion amber beer gravy, finished with fresh parsley.

Ingredients

2 lbs pork loin

1 pinch salt and pepper

1 oz olive oil blend

2 slices bacon, julienned

1 medium onion, diced small

1 tablespoon flour, all-purpose

1 beer, amber

½ cup water warm

½ teaspoon beef base

Fresh chopped parsley

salt & pepper

Preparation

Generously season the pork loin with salt and pepper. Apply olive oil by rubbing it over the pork loin. Place it in the oven at 300°F for 30-40 minutes to achieve a nice medium doneness. Remove and allow it to rest. Slice when ready.


In the pan where the pork was roasted, drizzle more oil, add bacon, and brown for 2 to 3 minutes. Add the onions and sauté with the bacon over medium heat until soft, about 6 to 7 minutes. Sprinkle in flour, stir for 1 minute, then pour in the beer. Cook until it reduces by half, about 1 to 2 minutes.


Prepare a stock using water and beef base, then add it to the sauce and whisk together. Season with salt and pepper.


Slice the meat, pour the sauce over the pork, and serve. Finish with some freshly chopped parsley.
